My focus has definitely been on my Teochew site lately, but I still make time to have some fun cooking sessions with my friends! My friend and I get together every other week and we alternate picking a dish to cook. This Friday, it was her turn and she chose pizza and a spicy mac and cheese, because she's really into spicy food and because she had a whole bunch of heavy cream she needed to use up.
For the most part, I was in charge of the pizza. I just wanted to do something with a simple tomato sauce and cheese, but I let my friend pick the toppings. We added mushrooms, onions, bacon, arugula, and sliced tomatoes, because tomatoes are my favorite pizza topping. My friend really wanted to put jalapeño on it as well, but Aldi was all out!
I think I'm getting a little better at spreading out this pizza dough into a nice circular shape! We cooked the pizza at 500°F for nine minutes, and I was actually really happy with how it came out. I feel like I almost always overcook my pizza and end up with a really hard crust, but this was still nice and soft! I might try to crank up to oven to 525 next time, but I have no idea what my pizza pan can withstand.
My friend did most of the cooking for the mac n cheese. She took out her cast iron pan for the first time ever, and we honestly didn't know whether it needed to be cleaned or seasoned before using it, and we also didn't know how to properly clean and season it after using it 😅 But it seemed to cook the mac and cheese well!
The mac and cheese was quite tasty, but man it was heavy. I took a small portion for myself and then I felt like I couldn't eat any more. But I thought it actually worked quite well with a bit of that pizza sauce on top.
And even though I don't care for spicy foods like my friend does, I'll admit that jalapeño would have been really nice in this. Maybe I'll try making another spicy mac and cheese again, but I think I'll just stick to using milk in my mac and cheese. The heavy cream and bacon was too much for me.
Overall, this was a successful meal! Next time it'll be my pick for what we're making. What should I choose? 🤔
I made some carnitas and invited some friends over to have a taco night! And two of my friends brought homemade tortillas and guac, which were 👌
I was too excited to eat so I didn't really put a lot of effort into photos, but I'll share a couple of photos that my friends took!

Every other Friday, I go to my friend's house and we have a co-working session. Technically, I'm not really working, but I do use that time to make updates to this blog! After work, we'll grab some groceries and then we'll cook something for dinner. We seem to have a tendency to pick dishes that take quite a bit of time to prepare, which was especially true this time.
My friend wanted to try the Taiwanese beef noodle soup recipe from the Woks of Life cookbook. I saw that it used spicy bean paste, which is great because I already have it, but it also called for a bunch of things that neither of us had. I went to three different Asian stores to look for cumin seeds, coriander seeds, whole white peppercorn, and pickled mustard greens. And I didn't even find the coriander seeds! My friend ended up getting that from a fourth store. And we still went to Aldi the day of to grab everything that we could get from a non-Asian store.
Unfortunately, after I arrived at my friend's house on Friday, I realized I forgot the spicy bean paste 🙃 It's okay, she had other spicy pastes that we used instead. I was just annoyed that we couldn't use mine.
The recipe states that you need to braise the beef for 20 minutes and also simmer the soup for 90 minutes after that. So we tried to start prepping early, which was a little before 5pm for us. Even with that, it already past 7pm before we got to the "simmer" step. So we ended up eating dinner at around 9pm. (It's a good thing we ate lunch at 4 😅)
But the late dinner time didn't bother me! I thought it was a successful meal. We actually cut back a little bit on the amount of dark soy sauce, but I think it could have used the full amount. Or maybe just more regular soy sauce. It was a pretty dark broth already.
The recipe says that the dish tastes even better the next day, so I took some leftovers home and had some for breakfast a couple days later. It honestly tasted about the same to me, but I thought it tasted pretty good the first night, so I was still very satisfied.
Foods that I didn't care for when I started this blog, but have grown to love:
I mean, I've always loved frozen treats and warm baked goods, but I just never really saw myself as a dessert person. But man, I seem to really be developing a sweet tooth over the past couple of years.
Earlier this week, I invited a friend over for dinner, which of course meant I also invited him over for dessert. I have way way way too many dessert options in my kitchen right now, but we ended up making smoothies. And by "we", I mean I chopped up some strawberries, and he was the one who actually blended the smoothie and decided what to put in it:
Yup, that's right. A strawberry smoothie with dairy. If you've known me for long enough, you know that I've always hated mixing berries with cream. Whenever I go to smoothie or bubble tea shops, I always ask if they put dairy in their smoothies. I get my strawberry smoothies dairy-free every single time. Just two years ago, I'm sure I would have taken a sip of this smoothie and thought it was gross.
But oh my god, it was delicious.
(Hey, that's four entries in a row where I'm calling my food delicious!)
My little sister called me while the smoothie-making was in progress, and in a shocked tone she said "Jeje, you like pink things now?!"
Yeah, I guess I do.
And with that, I'm going to announce that it's time for me to put the blog posts on pause again so I can focus on other things.
v2! of the blog has been great. I've really, really been enjoying writing these entries. When I first started this blog, it was just a place for me to share photos of the food I make. Food blogs are known for having incredibly long personal anecdotes before every recipe, and I didn't want to be one of those obnoxious bloggers. But I later realized that I just need to write whatever feels right for me. I don't have recipes (yet!), so I decided to embrace the cheesy backstories.
Even though I won't be writing new posts for a while, that doesn't mean I'm totally putting the blog on hold. I've got some fun blog-related projects that I'm cooking up (heh). What will the blog look like when I write my next post? Will there be a v3?! Who knows.
But I will be back eventually.
When I was in college, well before I knew how to cook, I went on a spring break trip to Chicago with my two best friends. This was sponsored by the school and we stayed at a hostel. For some crazy reason my one friend really wanted to cook during this trip. I definitely did not, seeing as I didn't know the first thing about cooking, and even with the amount of cooking experience I have now, I still wouldn't want to cook during a vacation.
But that's what we did. We went to the grocery store, and my friend asked me "What do you want to make?" I didn't know, and she probably made several suggestions, and I probably seemed less than interested in every single one of them, which was just the first of many times one of us got annoyed at the others during this trip.
Anyway, we settled on pasta. A really simple spaghetti + pasta sauce + ground beef pasta. Of course at the time, I could barely boil water, so it still seemed really intimidating to me. But we managed. It tasted fine. And we did not cook again during that trip (thankfully). And that was the only time I had ever cooked pasta with my friend(s).
...until last week! I invited one of my friends over for an "easy" pasta meal, and since my initial pasta-with-friends session, I guess my idea of an easy meal has changed a lot. It ended up being more than he expected, heh.
But it was delicious and it is so worth it to make your own pasta sauce.
I'll definitely make more pasta meals with friends in the future (:
